Instructions
Ingredients:
2 tsp dried Calm Cup butterfly pea tea
1 cup hot water
1 cup coconut milk (or any milk of your choice)
2–3 tbsp sugar, maple syrup, or honey (adjust to taste)
1 tsp agar-agar powder (or gelatin for non-vegan version)
A few drops of lemon juice (optional, for colour change effect)
Fresh fruits or edible flowers for garnish
Instructions:
Brew the Tea:Steep the butterfly pea flowers in hot water for 5–7 minutes until the water turns deep blue.
Strain and set aside.
Prepare the Agar-Agar:In a small saucepan, combine agar-agar powder with ½ cup coconut milk.
Heat gently on medium, stirring constantly until the agar dissolves completely.
Combine:Add the brewed butterfly pea tea, remaining coconut milk, and sweetener into the saucepan.
Stir well and simmer for 2–3 minutes. Do not boil too vigorously.
Pour into Moulds:Pour the mixture into serving glasses or moulds.
Let it cool at room temperature for 10–15 minutes, then refrigerate for 2–3 hours until set.
Optional Colour Change Effect:Just before serving, add a few drops of lemon juice to see the vibrant blue turn into a soft purple—magical!
Serve:Garnish with fresh berries, mint leaves, or edible flowers. Enjoy a refreshing, calming dessert!
